Polyphenols in onion and parsley have strong antioxidant properties and are beneficial for inflammatory conditions, such as arthritis and asthma. Parsley also has diuretic properties and can stimulate the liver in conjunction with lemon juice, thereby having detoxifying effects.
"How often do we eat out?"
I grew up in dorms for the majority of my life, while my husband grew up at home. When we got married, we both were looking for something different. My husband was always excited to eat out, and I always wanted the stability and comfort of eating at home with meals that brought us together. As a compromise, we decided to make eating out more of a celebration than for convenience purposes. This is one meal that has managed to make eating at home more of a convenience than eating out!
Parsley is a new addition to the original recipe. Once I learned of its health benefits, I began blending the herb into my cooking, and it has added a new, tasty flavor to the dish.
Channa Roll
Total Prep Time: 8-12 hours
Total Cook Time: 10 minutes
Ingredients:
1 cup dry channa or 1 can chickpeas
Seasoning:
2 tbsp. olive oil
1 tsp. urad dal
1/4 tsp. cumin
Pinch mustard seed
Pinch fenugreek
1 medium onion, chopped
1-2 green chilies, chopped**
Chili powder**
Salt**
5 sprigs fresh parsley
Optional: lemon juice
** Flavor is an expression of your personality; therefore, while rough guidelines on salt and chili measurements have been given, please do tailor them to your own tastes or dietary tolerance.
Directions:
Soak dry channa for 8-12 hours. Pressure cook. Alternatively, if limited in time, drain and wash canned chickpeas.
Heat a pan over medium-high heat. Add oil and seasoning mix.
Once the seasoning begins to splatter, add onion and green chilies. Reduce heat to medium and cook, stirring, for 1 minute.
Add parsley and continue stirring for 1 to 2 minutes.
Add pressure-cooked channa/canned chickpeas, salt and chili powder to the mixture. Continue stirring for 3 to 5 minutes. Once well-blended, turn off stove.
Place desired amount of mixture on top of a tortilla or roti. Optional: add onion, lemon juice, and/or lettuce on top, and enjoy! Mixture can alternatively be eaten as a side with rice.
