Veggies? What Veggies? - Green Bell Pepper & Besan (Gram Flour) Fry
Dr. Mom's Healthy Tips:
Latex Fruit Syndrome: About 30-50% of people allergic to rubber latex may also have sensitivity to chestnuts, avocados, bananas, kiwi, peaches, tomatoes and bell peppers. However, allergy testing or avoidance of these foods without a prior reaction is not necessary.
I always add ajwain seeds to dishes with besan (gram flour). Ajwain seeds promote digestion and decrease gastrointestinal intolerance to besan.
Just like any other mom, I had a hard time trying to feed my children vegetables. But, whenever I made pakodis, a deep fried onion and gram flour snack, it would disappear before it made it to the plate! With this in mind, I created a healthy and tasty version of pakodis. The combination of carbs, protein, fiber, and nutrients in this dish make it a wholesome meal!
Green Bell Pepper & Besan (Gram Flour) Fry
Total Cook Time: 25 minutes
Ingredients:
4 green bell peppers, diced finely
1 medium onion, diced finely
½ cup besan or gram flour
1 tablespoon chili powder**
2/3 tablespoon salt**
½ teaspoon turmeric
½ teaspoon ajwain seeds, crushed
4 tablespoons olive oil
** Flavor is an expression of your personality; therefore, while rough guidelines on salt and chili measurements have been given, please do tailor them to your own tastes or dietary tolerance.
Directions:
Coat a frying pan with one tablespoon olive oil on high heat.
Add onions, stir occasionally for 5 minutes.
Add green bell peppers, chili powder, salt, turmeric, and crushed ajwain seeds to pan and stir.
Cover the pan and reduce heat to medium, continue cooking for 5-10 minutes until peppers are softened, stirring occasionally.
Reduce to low heat and sprinkle the besan (gram flour) evenly over the pepper mixture. Stir frequently to prevent the flour from sticking to the pan.
Add the remaining 3 tablespoons olive oil and continue stirring for 10 minutes.
Turn off heat and serve hot with a side of rice. This dish goes well with plain yogurt as well!
